Guilin rice noodles are one of the most famous local foods in Guangxi, China. Their history can be traced back to the Qin Dynasty, and they have been passed down for more than 2,000 years.

A real bowl of Guilin rice noodles has four key parts:

Fresh rice noodles: They are made from local rice. The rice is ground, steamed, and made into noodles. The noodles are smooth, soft, and slightly chewy, with a fresh rice smell.

The rich broth sauce: This is the soul of the dish. It is slowly cooked with pork bones, beef bones, and more than ten kinds of spices and Chinese herbs. The taste is savory and rich, with a pleasant aftertaste.

Crispy pork belly: This is deep-fried pork belly with a golden, crispy skin. It is fragrant, crunchy, and a classic topping for the rice noodles.

Side ingredients: Pickled long beans, pickled bamboo shoots, fried soybeans, and chopped green onions add more texture and layers of flavor.

The traditional way to eat Guilin rice noodles is “first mix, then drink the soup.” First, mix the noodles with the sauce and toppings, so that every strand is full of flavor. After finishing the noodles, drink a spoonful of clear bone soup to finish the meal in a light and refreshing way.

Guilin rice noodles are not just a bowl of noodles. They are also a way of life. They are simple, rich, and leave a long, pleasant memory.
