Xining Kang Guo Lamb(西宁炕锅羊肉)is a signature dish of Qinghai Province. Its name comes from the unique cooking method: ingredients are slowly pan-fried in a thick metal pot with little oil, combining pan-frying, steaming, and baking.


The dish features locally raised lamb, which is tender and not gamy, together with highland potatoes that turn crispy outside and soft inside. Hand-pulled wide noodles soak up all the flavors, while onions and peppers add freshness. Seasonings like cumin, chili, and Sichuan pepper give it a rich, aromatic taste.
